A Note About Our Larger Racks

Not all of our baby backs come from the same size animal.

Our smaller racks are comparable to the baby back ribs you would typically see from a conventional market hog.

Our largest racks — particularly those weighing 50 ounces or more — come from mature Berkshire animals. These ribs are noticeably larger, thicker, and meatier, with a deeper pork flavor and a slightly firmer texture than a traditional baby back rack.

We recommend giving these larger racks a little extra time. Cook them gently at approximately 250–275°F, allowing plenty of time for the meat to become tender. Wrapping the ribs during part of the cook can help retain moisture and encourage tenderness.

They are an excellent choice for the smoker or a long, slow oven cook — just don't expect a 4- or 5-pound Berkshire rack to cook exactly like a smaller grocery-store baby back.
